“ This is an experience I had with Souffle Cafe & Bistro in Cibolo. Wanting to try a new restaurant w/ hearty breakfast options and found this new gem in the block on Yelp. Glad I tried! It is located on Brite Rd at a small plaza (The Shops at Cibolo Creek) between 1103 and Weil Rd, not too difficult to find since there're not much buildings around the area when I visited. It is a small mom & pop restaurant that gave me a warm homey feeling while entering the restaurant; usually the small ones have the best food & service! Ordered the Chicken panini w/ salad and the mango/strawberry juice, recommended by the owner. The food is amazing. The panini bread is crisp on the outside, w/ well proportioned chicken filling accompanied by fresh sliced tomatoes... savory yet fulfilling. The salad is also very fresh w/ healthy balsamic dressing. Server is also very attentive and made sure I liked the food. The mango/strawberry juice is surprisingly refreshing and thirsty quenching. Last but not least, they are military friendly! Because of the great tasting food and superb service, will definitely come back to try more items! Creme brûlée latte on my list. “ While out and about running errands in Cibolo, I was in need of breakfast. I asked a coworker of mine in Schertz, and he recommended Soufflé Cafe. I looked it up on Yelp!, and after looking at the reviews and pictures, it looked pretty solid. I arrived and parked in the parking lot. I strolled inside and waited to be greeted. A quaint small café, no patrons anywhere in sight. I heard employees scurrying in the back, but there was no employee visible anywhere. No patrons, no one at the counter. Hmmmm.. Ok.. I stood there for two minutes (yes, I checked my watch) no one had greeted me. Out the door, and back to my car I went. I sat in my car and Googled other eating establishments. While Googling, I saw a gentleman walk in, and walk back out with a to-go bag. So someone had appeared right after I walked out. I decided to give it another shot. So, I strolled back inside. This time I was greeted promptly, and ushered to a table with a menu. My drink order was taken, and I was left to peruse the menu. A lot of good breakfast options, and a variety of special coffee type drinks. In good time, my iced tea made it to the table, and I ordered. I opted to keep it simple and opted for the All American. Eggs scrambled hard, bacon, scallions, and crispy home-fried potatoes. Pretty simple. I took a sip of my iced tea. The tea, while team flavored, had a pronounced coffee flavor, and was gritty. I guess they use the same machine both for coffee and tea, and did not change the filter? Hmm.. ok. Well, maybe that's on me for ordering that since the menu tries to steer you toward a specialty coffee. Based on how I was the only person in there, maybe they had to make a batch just for me, and it didn't turn out well. My food arrived in good time. The eggs were a little wetter than I would have liked, and were not scrambled hard. Eh, oh well. They were delicious anyway. The bacon was sort of flimsy and not crispy as the menu implied. No big deal, still delicious. The potatoes were crispy with a tasty seasoning. Breakfast was delicious. Overall, despite the rough start, this turned out to be great. My friend's recommendation was verified, and the reviews were accurate. Food was great too. Next time I am in the area, I will be back. Definitely recommend this place for breakfast. “ Small little restaurant out in Cibolo, Texas that packs some great flavor. I'm not an omelette person but had to try it from the plating I saw from other patrons. They did not disappoint. I highly recommend going in early as we had an hour wait and the establishment does not hold a lot of people. The workers were friendly and gave that "Mom & Pop" feel. ”

We had a classic breakfast of bacon, eggs, and potatoes as well as an omelette and their signature waffle latte. The eggs were perfectly cooked and fresh, the potatoes were so crispy and delicious, and the omelette was fluffy and well seasoned. I really can't wait to go back! The ambience is cozy and a little crowded. The space is small and the restaurant is popular, so they make use of every square inch! The service was awesome as well, our server was so sweet and she was kind enough to let me practice my very basic beginner Spanish skills on her, lol. We need to go back to try more of the menu! ”
